Superman Hero Sweet Potato Slider Melts

Potato sliders are delicious but they’re not exactly known as a health food due to the high grease of most recipes in this category. You’ll be glad to know that our sweet potato sliders recipe is as nutritious as a tasty snack can get!

Take a break from your instant pot preparations to get a dish as hearty as ground beef! What’s that? Are our sliders paleo whole30? Absolutely! The following ingredients will be enough to make two sliders so adjust the portions if you wanna make a bigger batch.

Grab four 50g sweet potatoes and cut them into four thick pieces — these will serve as the sweet potato buns for your sliders. Get 6oz of turkey lunch meat, a slice of mozzarella cheese, two slices of Roma tomato, two tablespoons of BBQ sauce, and a handful of spinach.

Once all your ingredients are ready, turn on your oven and set it to 375 F. Start by cutting the mozzarella slice into four pieces. On one of your sweet potato slices, add spinach, a slice of tomato, 3oz of turkey meat, a tablespoon of BBQ sauce, and two mozzarella cheese pieces.

Top it with the second sweet potato slice then skewer it with a wooden kabob through the whole slider until it pierces the bottom bun. Repeat the process for your second slider. Place your sliders on a baking sheet then leave them to bake for half an hour at 375 F.

Wait until the sweet potato is at the right firmness level. Some people like them soft but I prefer the firmer version so you can get a good grip on it like a true slider. Be sure to let them cool before taking a bite or you could burn your tastebuds and miss out on the world-class flavor!

Ingredients for 2 sliders:

  • 200g (4 x 50g) sweet potato cut into semi-thick pieces
  • 6oz turkey lunch meat
  • 1 slice mozzarella cheese
  • small handful of spinach
  • 2 Roma tomato slices
  • 2 tsp BBQ

Steps

Step 1

Set oven to 375F.

Step 2

Slice a sweet potato into 4 thick pieces to make the buns of the sliders. TIP: You can pre-bake the slider buns in the oven for about 8-10 minutes prior to assembling the slider. This will help ensure that buns are fully cooked when eating. Simply place them on a baking sheet and toss them in the oven. Just that easy!

Step 3

Cut the slice of mozzarella cheese into 4 pieces.

Step 4

On one sweet potato slice, add spinach, 1 tomato slice, 3oz turkey meat, 2 mozzarella cheese pieces, 1 tsp BBQ sauce.

Step 5

Top with the other sweet potato slice and jam a wooden kabob skewer all the way through the entire slider so that it pierces the sweet bun below.

Step 6

Repeat for the other slider.

Step 7

Place them on a baking sheet and bake for 30 minutes at 375F or until the sweet potato is cooked to desired firmness/softness. I prefer them to be firm so that you can hold it like a slider.

Step 8

Allow the sliders to cool before eating.
