Southwest Stuffed Sweet Potato Meal Prep

If you’re looking for new potato recipes to prepare, this sweet potato recipe is just for you! Grab your sweet potatoes, which are packed with complex carbs, healthy sugars, and high protein content. If you’re ready to spice up your potato game, then it’s time to make some southwestern stuffed sweet potatoes!

For the ingredients, you’ll need about three large sweet potatoes, but you can always add more sweet potatoes if you’re planning to share it with your family and friends. Then you’ll also need black beans, broccoli, corn, tomatoes, bell pepper, green onions, and zucchini. For the sides, we’ll be using chicken breasts as the sides for the meal. If you don’t prefer chicken, you may use tofu or tempeh, or Portobello mushrooms as your side. But for this recipe, we’ll stick with chicken breasts.

Begin with baking your sweet potatoes in the oven until soft for about one to one and a half-hour. Next, season your chicken breasts with sea salt, pepper, cayenne pepper, and smoked paprika. You can cook your chicken in a skillet, bake in the oven, or you can toss it in the grill for the smoky chicken flavor. Then chop up your broccoli, tomatoes, bell pepper, green onions, and zucchini.

Next, sauté garlic in a nonstick skillet. Add in your corn and black beans and let them cook for a while. Throw in your veggies, and stir them until soft. Slice your potatoes in half and scoop the inside of the potatoes and bring them back in the oven for five minutes. Then, stuff your potatoes with the veggies and top it off with mozzarella cheese and bake them again for eight minutes at 405°F and you’ve just made southwest stuffed sweet potatoes.

Serve your stuffed sweet potatoes on a plate, or you can pack it up for lunch. This recipe is also ideal as a post-workout meal because it is packed with proteins and carbs to fill you up.

    • Each “hollowed out” sweet potato half is about 150g; remember to use the leftover portion to make creamy mashed sweet potatoes 
  • 1 cup black beans (optional)
  • 1 cup broccoli
  • 2 vine tomatoes
  • 1 cup corn
  • 2/3 bell pepper
  • 3 green onions
  • 1 zucchini
  • 5 tbsp mozzarella (optional)
  • Seasonings: cayenne, paprika, sea salt, pepper
