This low-carb roasted beet hummus is a healthy and tasty dip or spread that’s perfect for snacking or entertaining. It’s made with just a few simple ingredients, including raw beets, tahini, olive oil, lemon juice, and garlic, and it’s easy to customize to your liking with different seasonings and garnishes.
To start, preheat your oven to 360 degrees Fahrenheit. Make sure to wash the beets so that any dirt gets removed. After you wash them, remove the ends and throw them away. Take a baking tray and line it with foil. Place the beets on the tray and drizzle over some olive oil. Place the beets in the oven for an hour or until they are soft. Let the beets cool down before you try to peel them.
Next, place the roasted beets, tahini, olive oil, cayenne pepper, sea salt, lemon juice, and crushed garlic in a food processor. Blend the ingredients until smooth, seasoning with additional sea salt and lemon juice if desired. If you need to add more olive oil or tahini to achieve the desired consistency, be careful how much you use as to not impact the macros too much.
Garnish the hummus with your choice of toppings, such as chopped herbs, nuts, seeds, or spices. Serve the hummus with your favorite low-carb crackers, veggies, or bread, or enjoy it as a spread on sandwiches or wraps. Low-Carb Roasted Beet Hummus

Ingredients for 3 servings:

  • 4 beets, raw (about 8oz)
  • 1 tablespoon olive oil
  • 3 tablespoons tahini
  • 2tablespoons olive oil
  • pinch of cayenne pepper
  • pinch of sea salt
  • juice from 1 lemon (or more/less to taste)
  • 1 clove garlic, crushed (or more to taste)



Step 1

Preheat oven to 360°F / 180°C / gas mark 4.

Step 2

Wash the beets to remove dirt, then chop off the ends and discard.  Place the beets on a baking tray lined with foil and drizzle them with a little olive oil.

Step 3

Roast for 1 hour or until soft and easily pierced with a knife/fork.

Step 4

Allow to cool and then peel the beets.

Step 5

Place all of the ingredients in a food processor or high-powered blender and blend until smooth. Season to taste with sea salt and lemon juice.  If you must add other ingredients such as olive oil or tahini, use them sparingly as they will impact macros.

Step 6

Garnish and enjoy!
