Microwave Sweet Potato Recipe with BBQ Chicken – 10-Minute Meal
Ingredients
- 150g sweet potato
-
5oz canned chicken
Sub: Rotisserie chicken, meat only
- 3 tablespoons BBQ sauce
- 1 tablespoon 2% Greek yogurt
- 2 tablespoons shredded cheddar cheese
- 2 teaspoons dried chives
- sea salt & pepper to taste
Steps
Step 1
Place sweet potato in a microwaveable safe bowl. Add 2 – 3 tablespoons of water. Pierce sweet potato with a fork all over, and microwave for 6 – 8 minutes.
Flake “baked” sweet potato with a fork once finished.
Step 2
While the sweet potato is “baking” in the microwave, mix BBQ sauce with chicken breast in a bowl.
Place the chicken mix in the microwave for the final 2 minutes of heating with the sweet potato.
Step 3
Add the chicken to the microwave sweet potato.
Then garnish with the remaining ingredients!

Hi, Kevin, all of your recipes are great! Thanks for sharing your passion with all of us. When do guys upload the recipes shared here on you app? I can’t find some recipes on the app or that’s how it’s supposed to be?

The recipes from the previous are uploaded the following month, usually at the top of the month (1st week of the new month). the recent updates have been happening mid-month tho because of some behind the scenes logistics. hope that helps and THANK YOU for supporting like you do.

I tried this recipe with Roast Beef Brisket! It was a great sandwich on Rye bread, Put your favorite sauce, or like me, on Almond flour pita bread which I make.
