Ingredients for 8 Meatloaf servings
- Meatloaf
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 medium red onion, diced
- 1 green bell pepper, diced
- 2 tablespoons Worcestershire sauce (optional but recommended)
- 2 lb 93% lean ground turkey
- 2 eggs
- 1 1/2 tablespoons The Fit Cook Everyday blend
- 1 tablespoon smoked paprika
- pinch of sea salt & pepper
- 2 tablespoons arrowroot
- 2/3 cup quick oats
- 1/2 cup grated parmesan
- Glaze
- 3/4 cup reduced calorie veggie ketchup
- 2 tablespoon dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup coconut sugar (or brown sugar)
- 1 tablespoon liquid smoke (optional but recommended)
- Mash
- 36oz (1020g) cauliflower florets
- 2 oz goat cheese
- 2 tablespoons butter
- 1/4 cup unsweetened almond milk
- 1 tablespoon The Fit Cook Everyday blend
- 1 tablespoon fresh thyme
- sea salt & pepper to taste
