Hi-Protein Zucchini Lasagna Meal Prep in Jars

Are you craving comfort food but afraid to add loads of calories to your diet? You can try this low carb Zucchini Lasagna Recipe. It has a low calorie count so you can enjoy it without feeling guilty about your food.

Zucchini looks a bit like yellow squash because it sometimes has a yellow colour. You can grow it in your garden, especially during the summer.

It is also essential to have the following: medium zucchini, ground beef or turkey, marinara sauce, tomato sauce, low-fat cottage cheese, egg white, mozzarella cheese, and seasonings.

You will need a skillet for cooking the sauce, a mandoline slicer, airtight jars, an oven or instant pot.

To make the perfect zucchini noodle, cut the medium zucchini into thin strips so you can get rid of the water. Adding salt to your zucchini strips can also draw excess water out. You can also try grilling the zucchini to lessen the moisture. You can drain your zucchini slices using paper towels.

Use a mandoline slicer to cut the zucchini into lasagna shape. You can bake zucchini lasagna by using hermetic jars by placing it in an oven or even in an instant pot.

You can bake it in more than one bottle. Freeze other containers if you can’t consume it immediately so that you can enjoy it throughout the week.

  • 1 lb extra lean ground turkey
  • 1.5 cup low sodium basil marinara sauce (I used Trader Joe brand)
  • 1 zucchini
  • 3/4 cup reduced fat mozzarella (optional but recommended)
  • 1 cup low fat cottage cheese
  • 1 egg white
  • Seasonings for meat: garlic powder, onion powder, cumin. Seasoning may not be needed if you purchase a “seasoned” marinara sauce.
