Easiest Citrus Chicken Stir-Fry You’ll Ever Make
Chicken recipes can sometimes be boring and straight-up plain in the taste department. However, that does not mean that you are out of options. With this simple yet amazingly tasting citrus chicken stir-fry recipe, the boring and tasteless chicken recipes that you know are a thing of the past. This recipe is so flavorful, but most importantly it has everything that your body needs. So, do not wait for a second longer and treat yourself.
For this simple citrus chicken recipe, you will need the following ingredients: about a pound and a quarter of chicken breast, one and a half cups of either broccolini or broccoli (whichever you prefer), one cup of chopped baby portobello mushrooms, one chopped red bell pepper, half a cup of chopped red onion, a spray of coconut oil, and sesame seeds for garnish.
For the stir-fry sauce, you are going to need: two tablespoons of coconut aminos (you can also substitute coconut aminos with low-sodium soy sauce if necessary), one tablespoon of apple cider vinegar, half a tablespoon of garlic paste, one tablespoon of Sriracha, one tablespoon of ginger, juice from two clementines, and optionally, raw organic honey for additional flavor and one tablespoon of arrowroot starch to thicken up the sauce.
Now, it is time to do the cooking. Prep time for this recipe is very short, so you can make it even in a hurry. Ok, first things first get a bowl. In it, you need to mix the ingredients for the sauce. Next up, chop the chicken into bite-size pieces and get a nonstick skillet. Spray the skillet with coconut oil or use some olive oil if it’s easier. Cook the chicken until it is almost done on medium-high heat and then add the vegetables to stir-fry. Cook for about three minutes, add the sauce and then stir. Do not forget those sesame seeds, garnish the dish and dive right in and enjoy!
Ingredients for up to 4 servings:
- ~1.25lb chicken breast
- 1.5 cup broccolini (or broccoli)
- 1 cup chopped baby portobello mushrooms
- 1 chopped red bell pepper
- 1/2 cup chopped red onion
- coconut oil spray
- sesame seeds (garnish)
- Stir-fry sauce:
- 2 tbsp coconut aminos (or low sodium soy sauce)
- 1 tbsp apple cider vinegar
- 1 tbsp raw, organic honey (optional but recommended for flavor)
- 1 tsp arrowroot starch (optional as a thickener)
- 1/2 tbsp garlic paste
- 1 tbsp Sriracha
- 1 tsp ginger
- juice from 2 clementines
In a bowl, mix together all the ingredients for the stir-fry sauce.
Chop chicken breasts into pieces.
Spray a nonstick skillet with coconut oil and set on medium-high heat. Toss in the chicken pieces and cook until they are about 85% finished.
When the chicken has nearly finished cooking, toss in the veggies and stir using a spatula. Cook for about 3 minutes.
Pour in the sauce and stir.
Garnish with sesame seeds for added flavor and crunch!
