A word of caution, when you are baking chicken, you want to make sure the internal temperature reaches a minimum of 165 F just to be safe. Investing in a food thermometer is a great idea, especially when making this baked chicken thigh recipe. I prefer thighs over baked chicken breasts since breast is sometimes easy to over cook, where as thighs remain juicy and tender for longer. While I love my chicken with the skin on, boneless skinless chicken thighs are better if you’re also watching your calorie intake.
This recipe is full of both protein and flavor, and could also be great paired with a dollop of greek yogurt or with some salad. This easy chicken dinner recipe can be made in larger batches and then portioned out for lunch or dinner. It freezes and reheats very well so you can easily work this into your meal prep rotation. While you can bake it immediately after adding the seasonings, marinating the thigh meat in the spices will allow the flavor to enter the meat even more. An hour or two, covered in the fridge will do wonders for developing the dish. However, if you’re short on time, there’s no harm in just popping it into the pre-heated oven as is.

Ingredients
Ingredients for 5 servings:
- 2.5 lb raw, lean chicken thighs
- Seasonings:
- 1 teaspoon curry powder
- 1/2 tablespoon ground cinnamon
- 1 tablespoon garlic
- 1 teaspoon smoked paprika
- 1/2 tablespoon extra virgin olive oil
- pinch of sea salt
- generous amount of pepper (if desired)
- Garnish:
- freshly chopped mint
Steps
Step 1
Set oven to 420F.
Step 2
Carefully trim away all visible fat. To reduce the amount of fat in this recipe, substitute the chicken thighs with lean chicken breasts.
Step 3
Add chicken thighs to a bowl and toss in the seasonings. Mix, and thoroughly massage the seasonings into the chicken using your hands.
Step 4
Place the chicken thighs on a baking sheet, allowing for enough space between the thighs.
Step 5
Bake in the oven for 15 minutes at 420F.
Step 6
Garnish with freshly chopped mint to boost the flavors even more.
