Easy Chickpea Blondies With Macadamia

If you want, you can add your favorite nut. I chose macadamia nuts for today’s recipe.

And remember, we are making blondies, so there’s no chocolate powder here. But, if you want to, you can add some chocolate chips or cacao powder.

Start by making batter in a food processor or in a high power blender. Add in cashew butter or peanut butter, cooked chickpeas, one ripe banana, an egg, some agave syrup and vanilla extract. Pop the top and blend until smooth.

In a mixing bowl add dry ingredients. Toss in oat flour, or you can use protein powder if you want, and add baking powder. Give it a quick stir and pour in the batter. Stir it up and add some macadamia nuts, or your choice of nuts. It will provide some nice crunch. Hazelnuts, almonds or some other nuts would go great with this recipe as well.

In a square baking pan lined with merchant paper, pour in the batter. Squeeze out a little bit with a spatula. Add some macadamia nuts on the top and bake in the oven at 350F for 25 minutes, or until the top gets golden brown color.

To make sure it is ready, get a toothpick and poke it, and if it comes out clean, it’s ready. When you take it out, leave it at room temperature to cool down a bit and firm up, before you start cutting.

  • Wet
    • 15oz (1 can) garbanzo, drained
    • 1/3 cup no salt added cashew butter (OR other natural nut butter of choice)
    • 1 tablespoon vanilla extract
    • 1 egg OR flax egg (milled flax mixed with water)
    • 4 tablespoons agave OR maple syrup OR honey
    • 1 ripe medium banana
  • Dry
    • 1/4 cup all-purpose flour (or oat flour), sifted
    • 1 teaspoon baking powder
    • OPTIONAL: 1 scoop vanilla whey isolate protein powder (included in macros)
  • 1/3 cup macadamia nuts (or nut of choice)

Steps

Step 1

Set oven to 350F.

Step 2

In a large bowl, mix together the dry ingredients.

Step 3

Add the wet ingredients to a food processor or high-powered blender.  Blend until smooth.  Empty the contents into the bowl with the dry ingredients and mix together using a spatula.  Fold in macadamia nuts and reserve some for topping.

Step 4

Line a square 8×8 (or 9×9) baking pan with parchment paper, then pour in the batter.

Step 5

Bake for at least 25 minutes or until the top is golden brown and you can pierce it with a fork and it comes out clean.

Step 6

Let them cool in the baking pan for about 15 minutes, then you can remove, slice and enjoy!
