Avocado Ramen Noodles Recipe

Savor the richness of the avocado and the warm appeal of ramen in this delicious meal of avocado ramen noodles. These noodles are creamy and delicious. Noodles should be boiled for just under four minutes or until they are quite soft. Drain and lay aside after done so they can be ready for the sauce.

Meanwhile, prepare the chicken breast by seasoning it with just a bit of sea salt, pepper, onion powder, and garlic powder. Cook the seasoned chicken in a heated pan for 6 to 8 minutes on each side, or until it is cooked through and the juices run clear. After cooking, remove the chicken and let it rest while you make the sauce.

To make a creamy and tasty sauce, mash ripe avocado in a bowl with minced garlic, finely chopped parsley, fresh lemon juice, and water. If more water is required, adjust the consistency to make sure it is pourable and smooth.

Afterwards, mix the cooked ramen noodles with the avocado sauce, giving the noodles a little toss to ensure uniform coating. Just add a tablespoon of water at a time until the sauce achieves the right consistency if it is too thick and clumping. Lastly, add the quartered cherry tomatoes for a colorful and fresh pop of flavor.

Avocado Ramen Noodles Recipe

Ingredients

  • 10oz chicken breast
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • pinch of sea salt & pepper
  • 4oz ramen noodles
    • I used millet & brown rice ramen
  • 1 1/2 cups cherry tomato, quartered
Sauce
  • 1/4 cup ripe avocado
  • 1 teaspoon garlic
  • 1/3 finely diced parsley
  • juice from 1/2 lemon
  • 1/3 cup water
    • add tablespoons of water
  • sea salt & pepper to taste

Steps

Step 1

Bring a pot of water to a boil and add noodles.  Once cooked to your satisfaction, drain and set aside. Should take no more than 4 minutes.

Step 2

Lightly spray chicken with avocado or olive, then rub the seasoning all over the chicken breasts.

Set a carbon steel or nonstick pan on medium-high heat and once hot, spray with oil then add the chicken breasts.  Cook the chicken for 6 – 8 minutes on each side, or until the juices run clear.  Remove from the heat and set aside.

Step 4

In a bowl, mix together the ingredients for the sauce.  Make sure the consistency is not too thick or else the noodles will clump.

Add the noodles to the sauce and gently toss. Add a tablespoon of water if the noodles are clumping.

Then fold in the tomatoes.
