Guacamole with Spicy Grilled Salmon

Guacamole with Spicy Grilled Salmon

Ingredients for 4 servings

* Optional Substitution Note

  • 8oz raw center-cut salmon fillet
  • spray avocado oil
  • 1 tablespoon smoked paprika
  • 1 1/2 teaspoons cumin
  • pinch of sea salt & pepper
  • Guacamole
    • 2 large avocados
    • 2 Roma tomatoes, diced
    • 1/2 medium red onion, diced
    • 1 cup finely chopped cilantro
    • 1 teaspoon cumin
    • juice from 1 lime
    • sea salt & pepper to taste

Steps

Step 1

Set oven to 420F.

Step 2

Lightly spray the salmon with oil then rub the seasonings over the fillet.

Step 3

Set a nonstick skillet on medium-high heat, once hot, spray with a little more oil, then add the salmon skin-side up. Sear the salmon for 1 – 3 minutes, ensuring it is not burning, then flip it over to sear for an additional 1 – 2 minutes. Place the entire skillet (with the salmon) in the oven to finish cooking, about 6 to 10 minutes depending on the thickness of the center-cut salmon.

Step 4

Once the salmon has finished cooking, flake it with a fork. IF the skin is crispy, dice that up, too!

Step 5

Add guacamole ingredients to a large bowl and mix together – it should be chunky with lots of texture. Fold in the grilled salmon (and skin) and mix well.

Step 6

Enjoy the guacamole with mini bell peppers OR for your lunch in a whole wheat pita or on a sandwich.
