Vegan-Friendly Energy Protein Balls

Vegan-Friendly Energy Protein Balls

Ingredients for 15 balls

* Optional Substitution Note

  • Wet
    • 1/2 cup natural nut butter (must have oil)
    • 1/2 cup raw honey (or maple, agave to make it vegan)
  • Dry
    • 2/3 cup crushed roasted almonds (or nut of your choice) – you can omit or reduce to lessen calories
    • 1 cup raw rolled oats
    • 4 scoops (~2/3 cup) vegan protein powder (I used Blogilates sweet cream flavor)
    • 1/3 cup dried cranberries, unsweetened
    • 1 tablespoon cinnamon

Steps

Step 1

Mix together the Wet ingredients in a separate bowl.

Step 2

In a larger bowl, mix together the dry ingredients.  If needed, place whole, roasted almonds in a plastic bag and crush them.   Add the wet ingredients, and using a spatula, mix and mash the ingredients until powder is NO longer visible.  This will be difficult and it will probably take about 5 minutes.  Once mixed, dampen your hands with a little water, then massage the ingredients, ensure the mixture has evenly distributed the ingredients.

Step 3

Use an ice cream scoop or spoon to carve out equal sized amounts and roll them into a ball.  Repeat until all the ingredients have been used.

Step 4

Store in an airtight container in the fridge up to 2 weeks, or in the freezer for longer whenever you want a sweet treat!
