Having a hard time choosing the right source of complex carbs? Look no further fit foodies! Every dieters’ nightmare is over! For here’s the flavorful sweet potato and quinoa patties! Perfectly made for dinner, post workout meals, and they’re vegan friendly too!

 

For this dish, you’ll need a hefty 475g of sweet potatoes then fill one and a half cups with quinoa. Fill a quarter of a cup with cranberries and an eight of a cup with chopped mint. You’ll also need to get two jalapenos with the seeds removed and chop them up into manageable chunks to release the flavor.

 

Now that all your ingredients are ready, find your favorite skillet and spray it generously with some coconut or olive oil. Cook your sweet potatoes then mash them up. Add in your dried cranberries, mint, chopped jalapenos, and cooked quinoa with the mashed potatoes in your skillet.

 

Use your hands to form small patties — also known as a quinoa cake — with the mix then cook them in the skillet for roughly 20 minutes at the medium heat setting. This batch should be enough for three to six servings in total but your mileage may vary depending on just how hungry you are for your sweet potato quinoa cake patties.

Ingredients

Ingredients for 3 to 6 servings:

  • 475g Sweet Potato
  • 1.25 cooked quinoa
  • 1/4 cup dried cranberries
  • 1/8 Cup chopped mint
  • 2 Chopped jalapenos (seeds removed)
Steps
  1. Spray skillet with coconut oil
  2. Mash cooked sweet potato
  3. Add cooked quinoa, jalapenos, mint and dried cranberries
  4. Form small patties by hand and cook skillet for 20 minutes on medium heat
  5. Enjoy!

TIPS:

  1. Do not overcook the sweet potato. It should be firm but able to be mashed.
  2. If your patty is too soft, add wheat bread crumbs before adding to skillet.
  3. Make sure the quinoa is not wet when you add it.
