Ingredients

Ingredients for 3 to 6 servings:

  • 475g Sweet Potato
  • 1.25 cooked quinoa
  • 1/4 cup dried cranberries
  • 1/8 Cup chopped mint
  • 2 Chopped jalapenos (seeds removed)

Steps

Step 1

Spray skillet with coconut oil

Step 2

Mash cooked sweet potato

Step 3

Add cooked quinoa, jalapenos, mint and dried cranberries

Step 4

Form small patties by hand and cook skillet for 20 minutes on medium heat

Step 5

Enjoy!
