Salmon Mango Salsa with Rice Recipe

Ingredients

Ingredients for 1 meal

  • 6oz salmon, raw (I used white king salmon)
  • 1/2 cup cooked jasmine rice (I used black jasmine rice)
  • 1 serving mango salsa (see below)
Steps
  1. Set oven to 400F.
  2. Season salmon with sea salt & pepper.  Set a nonstick skillet or griddle on high heat.  Once the pan is hot, spray it with a little olive oil, then place the salmon face down (skin side up) on the skillet to sear the top for about 2 minutes.  Flip it over in the skillet so the skin side is down, then place the entire skillet in the oven for 6 to 8 minutes, or until the flesh is completely cooked and can be easily flaked with a fork.
