  • 1 tablespoon taco seasoning (11g)
  • 1/4 cup cilantro (4g)
    • finely chopped
  • 4 brioche buns
    • whole wheat or gluten-free
  • 4oz 2% greek yogurt
Optional Toppings
  • green lettuce
  • tomato
    • slices
  • avocado
  • red onion
  • cheddar slices

Steps

Step 1

Mix the bison, spices, and cilantro.

Remember to use fingertips and be somewhat gentle so as not to overmix the ground and end up with an unappetizing firm, packed finished burger. 

Form 4 equally sized burgers, again being gentle so as not to make them too compact.

Step 2

Set a carbon steel or cast iron skillet on medium-high heat.  Spray with avocado oil (or any oil you have) and make sure the skillet is not too hot.  Add the burgers and cook until you reach your desired doneness.

  • medium-rare: 2 – 3 minutes per side
  • medium: 3 – 4 minutes per side
  • well-done: 4 – 5 minutes per side
Step 3

Prep the buns and toppings while the burgers finish in the skillet.  If desired, toast the buns.

Step 4

Build the burger using Greek yogurt instead of mayonnaise with toppings of your choice.  Enjoy with low calorie tortilla chips or a garden salad.

Alternatively, you can break the patty apart and enjoy it with a garden salad.
