This low carb taco salad recipe uses moist and tender salmon rather than ground beef and is one of the best taco salad recipes you will find. You can also dress the salmon up with taco seasoning, and add a spoonful of low fat sour cream for an extra punch of flavor. Taco Salad with Ezekiel tortillas

For this recipe, we created a taco salad shell using Ezekiel tortillas, which is a tortilla made from sprouted grains including barley, beans, millet, spelt, and wheat. It is healthier because it is made from whole grains and sprouted, which means it contains less gluten than regular dry grains. It also has a lower glycemic index, making it safer for diabetics, while it’s high in soluble fiber that will keep you full for longer without piling on the calories. By molding it into a bowl shape and then baking it, it puts a delicious spin on a classic favorite.

Salmon is a great source of protein and omega-3 fatty acids, which can help lower blood pressure and prevent heart disease. The avocado in this dish is an excellent source of B-6 and also omega-3 fatty acids. It adds a creaminess to the dish as a contrast to the acidity of the pico de gallo. You can make portions of the salmon, pico de gallo, and keep avocados and mixed greens on hand so that lunch or dinner is just minutes to put together. Salmon Taco Salad

Ingredients

* Optional Substitution Note
  • 1 large Ezekiel tortilla
  • Baked salmon (according to your liking)
  • Pico de gallo
  • 1/2 small Haas avocado
  • 1 tbsp Goat Cheese crumble

Recipe to make taco shell:

Step 1

Set oven to 350F.

Step 2

Lightly spray a taco shell mold with olive oil or coconut oil.

Step 3

Place the Ezekiel tortilla inside and form it to fit the mold.

Step 4

Sprinkle with a little garlic and lightly spray with olive oil (optional)

Step 5

Bake in the oven for 10 minutes. Remove from the oven and let it cool for about 5 minutes before removing the tortilla from the mold.

Step 6

Assemble your salad. Mix greens together with pico de gallo and place inside the shell. Flake the salmon and place it over the salad. Add dices of avocado and goat cheese.

Step 7

Devour it like a boss!
