Low Sugar Ginger Pineapple Chicken and Rice

Ingredients for 5 servings

5 Servings

  • 3 cups cooked Basmati rice (or brown rice, jasmine, quinoa)
  • Chicken
    • 1 1/2 lbs lean chicken thighs (OR frozen peas)
    • pinch of sea salt & pepper
    • 2 tablespoons Sriracha
  • Sauce
    • 1 1/4 cup fresh pineapple juice OR water
    • 1 cup fresh diced pineapple
    • 3 tablespoons low sodium soy sauce (or more/less to taste)
    • 1 1/2 tablespoons fresh ginger (or more/less to taste)
    • 1 1/2 tablespoons arrowroot starch (OR cornstarch OR tapioca flour)
  • 1 1/2 cup diced bell peppers (I used a combination of 3 different colors of bell peppers – red, yellow, orange)
  • 2 green onions, chopped
  • Garnish
    • green onion
