Low Sugar Ginger Pineapple Chicken and Rice

- 3 cups cooked Basmati rice (or brown rice, jasmine, quinoa)
- Chicken
- 1 1/2 lbs lean chicken thighs (OR frozen peas)
- pinch of sea salt & pepper
- 2 tablespoons Sriracha
- Sauce
- 1 1/4 cup fresh pineapple juice OR water
- 1 cup fresh diced pineapple
- 3 tablespoons low sodium soy sauce (or more/less to taste)
- 1 1/2 tablespoons fresh ginger (or more/less to taste)
- 1 1/2 tablespoons arrowroot starch (OR cornstarch OR tapioca flour)
- 1 1/2 cup diced bell peppers (I used a combination of 3 different colors of bell peppers – red, yellow, orange)
- 2 green onions, chopped
