If you’re looking for a new plant based option to add to your dinner rotation, why not give the black bean quinoa recipe a try? These veggie burgers are packed with flavor and nutrition. With a bean burger like this, you will not even realize that it is not meat. This quinoa burger will provide you with the necessary nutrients after a hard workout.
For this beautiful black bean quinoa burger recipe, you are going to need the following ingredients. One fifteen-ounce can of drained black beans, one cup of cooked quinoa, one third cup of cooked corn, two green onions, one-fourth cup of bell diced bell pepper, one egg, one-third cup of wheat germ which you can supplement with instant oatmeal if you have an allergy, spray coconut oil, and finally for the seasoning you will need one tablespoon of smoked paprika, half a tablespoon of cayenne, and of course salt and pepper to your preferred taste.
Begin by draining one can of black beans. Now, put the beans in a bowl so you can mash them with a mallet, or if you prefer you can always use a food processor. Next up, you will need a large bowl. Place your bean paste in the bowl and start combining cooked quinoa, corn, green onions, bell pepper, egg, wheat germ or instant oatmeal depending on your situation, and finally do not forget your seasonings. When you have everything in a bowl, mix it very well so everything is combined together.
Now is the time to shape these patties. The best way is to use your hands, so roll up those sleeves. If you have problems with the patties forming because they are too wet and loose, just add a bit more wheat germ or instant oats to firm them up. Now all you have to do is either grill them on a BBQ grill or in a skillet with a light spray of coconut oil. Enjoy!
For 5 patties:
- 15oz can black beans (drained)
- 1 cup cooked quinoa
- 1/3 cup cooked corn
- 2 green onions
- 1/4 cup bell pepper
- 1 egg
- 1/3 cup wheat germ (or instant oatmeal if you have an allergy)
- spray coconut oil
- Seasonings: 1 tbsp smoked paprika, 1/2 tbsp cayenne, salt & pepper to taste.
Mash black beans in a bowl using a mallet, or place them in a food processor
In a large bowl, add of your ingredients and seasonings. Mix very well.
Form patties using your hands. If the patties are too loose and wet, then add tablespoons of wheat germ or oats to make them more firm.
If you are using an outside BBQ grill, then lightly spray the grill with coconut oil. If you are cooking in a skillet, lightly spray a non-stick skillet with coconut oil.
Enjoy with whole wheat hamburger buns or lettuce wraps for a lower carbohydrate option.
