Curry Roasted Cauliflower With Pistachios
Curry roasted cauliflower is definitely one of my top vegan dishes. It is packed with so many flavors and is amazing both as a main dish, appetizer, as well as a side dish. Nobody said that vegetables should be boring and lack flavor. With this recipe, you can enjoy cauliflower that packs some serious flavor. With that being said, if you are ready, let’s get cooking.
To start this amazing recipe, you are going to need the following ingredients: a head of cauliflower (depending on how many portions you make pick a small or a large one), one tablespoon of extra virgin olive oil, a three-fourths tablespoon of curry powder, one teaspoon of coriander, and salt and pepper according to taste. For the garnish, you will need some fresh chopped cilantro, juice of one lemon (freshly squeezed) and pistachios, about six tablespoons.
Now comes the cooking part. Start by setting the oven to 400 degrees Fahrenheit. While the oven is getting to the desired temperature, prepare the cauliflower by copping it. The goal here is to create florets, do not chop it too small. Next up, take the olive oil and pour it over the cauliflower making sure to cover everything. After that, add the curry, salt and pepper, and coriander. Make sure to mix it well so that everything is covered with spice evenly. Take a baking sheet and put the cauliflower in. Place it in the oven for about 25 to 30 minutes. Roasting cauliflower brings out its natural flavor and helps to incorporate spices. When it is done, sprinkle over cilantro and chopped pistachios and pour over the lemon juice.

Ingredients for 3 servings:
- 1 large head of cauliflower
- 1 tablespoon extra virgin olive oil
- 3/4 tablespoon curry
- 1 teaspoon coriander
- sea salt & pepper to taste
- fresh lemon juice
- fresh cilantro, chopped (to taste)
- 6 tablespoons crushed pistachios
Set oven to 400F.
Chop up the cauliflower to create florets.
Pour olive oil over cauliflower florets, then add curry, coriander and sea salt & pepper.
Mix it up, ensuring all the florets are covered, then dump them on a baking sheet.
Roast the florets in the oven for 25 to 30 minutes.
Once it has finished roasting, add cilantro, chopped pistachios and fresh lemon juice.
