BANANA NUT CRICKET MUFFINS

Ingredients for 6 muffins

  • Dry
    • 12 tablespoons (84g) fine almond flour
    • 1/3 cup (5 tablespoons) cricket flour
    • 1 teaspoon baking powder
    • pinch of salt
    • 2 teaspoons nutmeg, cinnamon or allspice (optional)
  • Wet
    • 2 eggs, lightly beaten
    • 1 medium banana, mashed
    • 3 tablespoons maple syrup (or agave)
    • 4oz (113g) unsweetened applesauce
  • Topping (OPTIONAL)
    • 1 tablespoon coconut oil (solid, not melted)
    • 4 tablespoons crushed pecans
    • 4 tablespoons walnuts
    • 1 tablespoon maple syrup
    • 1 tablespoon dehydrated crickets (OPTIONAL)
    • 2 teaspoons coarse sea salt (flakes)

Steps

Step 1

Set oven to 350F.

Step 2

Mix dry ingredients together in a large bowl.

Step 3

Mix together wet ingredients.

Step 4

Add the wet ingredients to the dry ingredients, then stir and fold until well mixed.

Step 5

Mash up the topping with a masher, stone or another heavy object.

Step 6

Spray muffin pan with oil, then evenly divide the batter among 6 molds. Top each one with some of the streusel topping.

Step 7

Bake for 22 -25 minutes, or until the top and edges are golden brown and you can pierce it with a toothpick and it comes out clean.

  • Wet
    • 4 eggs, lightly beaten
    • 2 tablespoons maple syrup (or agave)
  • 2 slices center-cut bacon, chopped and crumbled to bits
  • 2 green onions, finely chopped
  • 2/3 cup shredded reduced-fat cheddar cheese
  • Topping (OPTIONAL)
    • 2 tablespoons maple syrup
    • pinch of coarse sea salt or flakes
    • 2 slices center-cut bacon, chopped and crumbled to bits

Steps
