Getting creative in the kitchen is what cooking is all about. You should never be limited by anything. Using different methods can sometimes yield unexpectedly amazing results. This meatloaf recipe is just that. All of us have tasted regular meatloaf and to be honest, it is a classic dish enjoyed by everyone. That being said, you have probably never seen mini meatloaf muffins before. This recipe utilizes muffin tins to create perfect little meatloaf muffins that serve as a perfect portion. If you are big on meal prep, then this is the thing for you. So, get ready for some cooking!
Get together the following ingredients: one pound of ground turkey (try to find the extra lean kind), two egg whites, one cup of cooked quinoa, half a cup of steamed corn, a third cup of red onions, one-fourth cup of mozzarella (low fat), ten tablespoons of marinara, green onions, coconut oil, mushrooms and jalapeno are optional. For seasoning, you will need, one tablespoon of smoked paprika and garlic paste, and one teaspoon of cumin.
Begin by preheating the oven to 375 degrees Fahrenheit. Now, start cooking the quinoa per instructions on the packaging and after it is done, let it cool down. Put aside the marinara, mozzarella and green onions. Put the rest of the ingredients in a bowl and mix them together very well so that everything is incorporated into the meat. Take your muffin pan and spray it with the oil. Take the meat mixture and evenly divide it in every muffing holder. Once divided properly, add the marinara on top and right after add the mozzarella as well. Bake it for 20 minutes. Once done remove them and let them cool before you remove them from the muffin pan.
This recipe is perfect if you have guests over as you get perfect little portions. On top of that, if you are meal prepping, depending on how many muffin holders your pan has, you can easily make lunch for the whole week.

Ingredients for 5 servings:
- 1lb extra lean ground turkey
- 2 egg whites
- 1 cup cooked quinoa
- 1/2 cup steamed corn
- 1/3 cup chopped red onions
- 1 1/4 cup shredded reduced fat mozzarella
- 10 tbsp low sodium marinara or tomato sauce
- 1/3 cup chopped jalapeno (optional)
- 1/2 cup chopped mushrooms (optional)
- chopped green onions for topping
- spray coconut oil
- Seasonings:
- 1 tbsp garlic paste
- 1 tbsp smoked paprika
- 1 tsp cumin
Utensils: mini-loaf pan or regular muffin pan

Steps
Step 1
Set oven to 375F.
Step 2
Cook quinoa according to the instructions given. After cooking, allow the quinoa to cool to room temperature.
Step 3
In a bowl, mix together all of the ingredients, except for marinara, green onions and mozzarella. Use your hands to mix to ensure the meat is thoroughly mixed together.
Step 4
Spray the muffin pan with coconut oil.
Step 5
Evenly divide the mixture among 5 mini-loaf muffin holders, as demonstrated. If you are using a regular muffin pan, evenly divide the mixture among 10 muffin holders.
Step 6
Spread marinara sauce on top. Add 2 tbsp if using 5 mini-loaves, or 1 tbsp for 10 muffins.
Step 7
Top with mozzarella cheese. Add 1/4 cup for each of the 5 mini-loaves, or 1/8 cup for 10 muffins.
Step 8
Bake for 20-22 minutes at 375F. Top with chopped green onions if desired. Allow the mini-meatloaves to cool before removing from the pan so that they do not break apart.
