Roasted Beet & Berry Protein Smoothie Bowl
Ingredients
- 1/2 cup roasted beet
- 1/2 cup basil leaves
- 2 cups frozen mixed berries

1 1/2 cups fresh orange juice
- or water
- 2 teaspoons maple syrup

2 scoops strawberry flavored grass fed whey protein

Steps
Step 1
Set oven to 420F/216C. Quarter a large beet, spray with a little olive oil, then roast in the oven for 22 – 25 minutes until soft and the outside edges begin to caramelize.
Once finished with roasting, set aside to completely cool.
Pro-tip: if you’re looking to enjoy this right away, place the roasted beets in a bowl of ice water to stop them from cooking and to cool faster.
Step 2
Add all ingredients to a blender and process until smooth. If you need it to be thinner, simply add tablespoons of orange juice or water. Alternatively, add frozen berries to thicken.
Step 3
Garnish and enjoy!
