Loaded Egg, Chicken & Avocado Toast

What do you get when you combine egg, Rotisserie chicken, and creamy avocado on top of a toasted sourdough? The most delicious, no-fuss chicken salad you can make on the go.

It’s a great base recipe and even better with some calorie-conscious customizations for your tastebuds.

Avocado has healthy fats, vitamins, and minerals which is a great addition to a well-balanced diet. Eggs are an excellent source of protein and will keep you full until the next meal.

If you didn’t find a ripe avocado, there are some ways for ripening an avocado faster. You can leave the avocado at room temperature, store it in a paper bag or add it to a bowl with apples or kiwi for a few days.

Start by placing the cooked chicken breasts in a food processor and blending until you get chunky, yet shredded chicken. If you have leftover chicken from a previous meal, this is a perfect recipe to use it.

Add ripe avocado to a bowl, and add yogurt, and shredded chicken breasts. Mush it up with a fork and toss in chopped celery stalk, fresh dill, chopped fresh parsley, 2 boiled and chopped eggs, and squeeze some fresh lime juice. Season with sea salt and pepper to taste. Mush and mix once less time and assemble the toast.

There are many different recipes for avocado toast with eggs, where eggs are prepared in different ways and added to toast, such as scrambled eggs, poached eggs, or fried eggs. I love all the options, but this one is my favorite because I can prepare it in advance and have a nutrient-rich breakfast the next morning. Try avocado toast with egg!

Loaded Egg, Chicken & Avocado Toast

Ingredients for 5 servings:

  • 1 lb Rotisserie white chicken meat, chopped
  • 1 large ripe avocado
  • 2 tablespoons yogurt
  • 1 celery stalk, chopped
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup fresh parsley, chopped (OR cilantro)
  • 2 eggs, boiled and chopped
  • fresh lime juice to taste
  • sea salt & pepper to taste

STEPS

Step 1

Mix chicken, avocado and yogurt together in a large bowl.  Then gradually fold in the remaining ingredients.  Enjoy on toasted bread OR on lettuce wraps.
