Loaded Egg, Chicken & Avocado Toast

Ingredients for 5 servings:

  • 1 lb Rotisserie white chicken meat, chopped
  • 1 large ripe avocado
  • 2 tablespoons yogurt
  • 1 celery stalk, chopped
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup fresh parsley, chopped (OR cilantro)
  • 2 eggs, boiled and chopped
  • fresh lime juice to taste
  • sea salt & pepper to taste

STEPS

Step 1

Mix chicken, avocado and yogurt together in a large bowl.  Then gradually fold in the remaining ingredients.  Enjoy on toasted bread OR on lettuce wraps.
