Pat chicken dry with paper towels and trim any large visible pieces of fat. To a bowl, add chicken and the ingredients for the marinade. Cover and marinate for 20 minutes, or place in the fridge to marinate for 1 to 2 hours.
Drain any excess liquid from the bowl with the chicken, then sprinkle arrowroot over the chicken and mix together. Note: it should be very sticky so you may want to use a spatula.
Set air fryer to 400F (or oven to 420F).
Place the corn flakes on a plate or a flat surface, then roll the chicken tender across the flakes, mashing them into the flakes.
Place the tenders in the air fryer basket (or on a baking tray lined with parchment if using the oven) and air-fry for 18 – 20 minutes, turning or flipping the tenders halfway.
