Irish Whisky Glazed Salmon Steak

Ingredients for 4 servings
- 20 oz salmon steaks (or four 5oz filets)
- pinch of sea salt & pepper
- Whisky marinade
- 1/4 cup Irish whiskey
- 1 teaspoon raw ginger
- 1 teaspoon fresh garlic, minced
- 1/4 cup low sodium tamari
- 3 tablespoons coconut sugar
- 1 tablespoon maple syrup (or raw honey)
- 1/2 green onion stalk, finely diced
Mix together the ingredients for the marinade and set aside.
Set a carbon steel pan on high heat. As the pan heats up, season both sides of the salmon with a pinch of sea salt & pepper.
Spray the skillet with oil, then add the salmon. Depending on the thickness of the fillet or steak, sear for 2 to 4 minutes, then flip and cook for an additional 2 to 4 minutes, or until your desired readiness (i.e., medium or well done).
In the final minutes of cooking, take the skillet off the heat, then pour the marinade over the salmon steak. Continuously spoon the sauce over the salmon to glaze it.
