Mediterranean Greek Turkey Burgers
This is one of my favorite recipes from my new cookbook. This Greek turkey burger is surprisingly succulent and very flavorful with each bite. Here’s why this is one of my most exciting “comfort food” makeovers…
I’ve heard over the years that ground turkey can be pretty challenging to enjoy – it’s leanness is one of the reasons why it’s touted as a healthier animal protein, yet leanness is also one of the reasons people cite as it being too dry and unenjoyable. I tend to agree – if you overcook turkey in the slightest in burger form, it becomes incredibly dry.
So, this recipe became a personal food challenge.
How could I use lean ground turkey for a burger and make it juicy (even when reheated for meal prep)?
The short answer – stuff it with “fat.”
The longer answer – I decided to transform one of my favorite salads, Greek salad, into a delicious burger. I’ve stuffed foods in ground meat before, but this particular version was FAR juicier and more robust in flavor than any I’ve ever made.
Why? The added fat content from the Kalamata olives and feta gave the burger the added flavor and moisture it needed to be enjoyed throughout the week for meal prep. So, whether you re-heat the burgers or enjoy them cold, the flavor will ALWAYS be there. You still don’t need to overcook the turkey, but in the event you do, there’s some “hope” that it won’t be as dry. Try it for yourself – get full recipe!
