Ingredients for 3 servings of low carb asparagus fries are bundle thick asparagus spears, 1 egg, 1 egg white, panko breadcrumbs, grated parmesan and coconut flour.
Start preparing the parmesan asparagus fries by mixing together panko breadcrumbs and grated parmesan. Whisk eggs in a bowl or dish. Then dip thick asparagus spears in coconut flour coating evenly, then eggs and breadcrumbs.
Bake on a baking sheet for 8 minutes at 375F or until they’re golden and crispy. If you have an air fryer, feel free to use it to make asparagus fries.
While you baking, make a dipping sauce. Mix 2% Greek yogurt with cucumbers, garlic, a pinch of sea salt. Squeeze some lime and your sauce is ready for tasting. Leave in the fridge until ready to use.

Ingredients for 3 servings:
- bundle thick asparagus spears (~400g)
- 1 egg
- 1 egg white
- 3/4 cup panko breadcrumbs
- 1/3 cup grated parmesan
- 1/4 cup coconut flour
TIP: before baking spray with coconut oil for added crispiness. Sprinkle sea salt & red pepper if you would like as well. Cook for no more than 10 minutes at 375F so the asparagus is firm. Dipping sauce: greek yogurt, cucumbers, garlic, sea salt, hint of lime.
