Quick Grilled Cajun Chicken

This quick and easy grilled Cajun chicken is an amazing recipe that you should definitely try. It takes next to no time to prepare and is packed with flavor. So, if you are having some friends over, or you simply like to meal prep in advance, try this recipe because you will definitely love it. Now, get ready for some cooking!

First things first, for the ingredients you will need the following. The main ingredient is raw chicken breast. You will need about a pound and a half of it. For the rub, you will need one tablespoon of garlic powder, one tablespoon of onion powder, one tablespoon of smoked paprika, half a tablespoon of cumin, half a teaspoon of cayenne, half a teaspoon of dried thyme, half a teaspoon of dried sage and salt and pepper to taste. You will also need some olive oil and chives for garnish.

To prepare this amazing grilled Cajun chicken, start by setting the oven to 420 degrees Fahrenheit. Next up, take all of the ingredients for the rub and mix them together well. Take the chicken breast and thoroughly rub it with the spices making sure it is completely covered. Make sure it is well covered to maximize the flavor. Get a nonstick skillet and put it on high heat. When the skillet gets to the desired temperature put in the olive oil and the chicken right after. The goal here is to only sear the chicken for about 3 to 4 minutes until it gets crispy. Make sure that the chicken is not sticking, if necessary; add more oil to prevent that. When the chicken is crispy, take the skillet and put it in the oven. Bake for 6 to 8 minutes until the chicken is ready.

Once done remove it from the oven and get the chicken out of the skillet. Let it cool before you slice and enjoy this amazing Cajun chicken.

Quick Grilled Cajun Chicken

Ingredients for 4 servings

  • 1 1/2 lb chicken breast, raw
  • Rub
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon cumin
    • 1/2 teaspoon cayenne (or more/less to taste)
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried sage
    • pinch of sea salt & pepper
  • spray olive oil
  • Garnish
    • chives (fresh or dried)

STEPS

Step 1

Set oven to 420F.

Step 2

Mix together the ingredients for the seasoning rub.

Step 3

Rub the seasoning over the chicken breasts.

Step 4

Set a nonstick skillet on high heat.  Once the skillet is hot, spray with a little olive oil, then immediately add the chicken breast.  Sear on each side for 3 to 4 minutes until the edges are dark and crispy.  If needed, spray the chicken breast while it sears in order to prevent any sticking and to enhance the sear.

Step 5

Place the entire skillet in the oven and cook for 6 to 8 minutes, or until the inside of the chicken is white and the juices run clear.

Step 6

Remove the chicken from the heat of the skillet and allow it to slightly cool before slicing. Garnish with dried or fresh chives. Enjoy as part of your weekly meal prep OR in my easy cajun chicken avocado wrap.
