Confession: one of my trigger foods happens to be kettle chips. Give me a family-sized bag, and I’ll likely eat the whole darn bag without even realizing it. That’s why I really like this healthier #recipe because it incorporates 2 of my favorite foods – chips & plantains, a great complex carb. Perfect for snacking, to accompany meals or for game night. Boom.

Baked Plantain Chips

Ingredients

Ingredients for 1-3 servings:

  • 2 green plantains (they cannot be ripe)
  • 1 tbsp coconut oil
  • Seasonings: cumin (paprika, cayenne are optional)
Steps
  1. Shake the pan or flip the chips after 10 minutes and spray with coconut oil. Bake them for another 10 minutes or until they are brown.
  2. For the last minute, set the oven to broil which should help to brown the remaining chips. Careful not to burn.
