This packs quite a delicious punch! If you’re looking to liven up breakfast and your taste buds, this is the dish for you. I used my official Fit Men Cook UFC pancake & waffle batter because, again, it the flavors have a little kick to them. Shout-out to all my MMA enthusiasts!

Bacon Jalapeño Gluten-free Waffle

Ingredients
  • 1/2 cup white sorghum flour (gluten free)
  • 1 egg
  • 1 egg white
  • 1/8 cup almond milk (unsweetened)
  • 1/2 tsp baking powder
  • 1 packet Stevia (optional)
  • 1 small jalapeño
  • 2 tbsp bacon bits (uncured, nitrate free, natural)
Steps
  1. Mix all dry ingredients together first in a bowl.
  2. Slice the jalapeño in half and remove all the white seeds.  Cut into small pieces.
  3. Add eggs, milk, bacon & jalapeños to the dry ingredients and mix.
  4. Pour onto your waffle iron and cook until desired readiness.

Approximate macros for waffle batter for 1-2 servings.
