Avocado Egg Rolls Recipe

Ingredients

Air fried Avocado chicken egg rolls with roasted salsa
Ingredients for 10 rolls

Serving size: 2 rolls
  • 12oz cooked white, skinless chicken meat (from Rotisserie chicken or leftover chicken breasts), chopped
  • 2 ripe medium avocados
  • 2 teaspoons cumin
  • 1/2 cup diced red onion
  • 1/3 cup cilantro, finely chopped and packed
  • pinch of sea salt & pepper
  • juice from 1 lime
  • 1 egg, beaten
  • 10 egg roll wrappers (TIP: these are usually found in produce section of the grocery store, or with plant-based products like tofu)
Steps
  1. Set air fryer (or oven) to 420F.
  2. Add  all the ingredients to a bowl and mix well together.
  3. In a small bowl, beat an egg.
  4. Add 2 – 2.5 tablespoons of the stuffing to the edge/corner of an egg roll wrapper.   Use your finger or a paintbrush to draw a line around the inside edges of the wrapper.  Then roll it over to seal the side with  the stuffing, then fold in the sides and continue rolling up like an egg roll.  Place it in the air fryer basket or a baking sheet lined with parchment.  Repeat 9 more times, or until all the stuffing is used up.
  5. Brush the outside of the egg rolls with the remaining egg mix, then gently spray the outside of them with avocado oil (or another high smoke point oil).
  6. Air fry for 10 – 12 minutes at 420F, flipping halfway through.
  7. Enjoy fresh out of the air-fryer or oven – these are DEF best served hot!
