AVOCADO EGG ROLLS RECIPE

Ingredients for 10 rolls

Serving size: 2 rolls
  • 12oz cooked white, skinless chicken meat (from Rotisserie chicken or leftover chicken breasts), chopped
  • 2 ripe medium avocados
  • 2 teaspoons cumin
  • 1/2 cup diced red onion
  • 1/3 cup cilantro, finely chopped and packed
  • pinch of sea salt & pepper
  • juice from 1 lime
  • 1 egg, beaten
  • 10 egg roll wrappers (TIP: these are usually found in produce section of the grocery store, or with plant-based products like tofu)

Steps

Step 1

Set air fryer (or oven) to 420F.

Step 2

Add all the ingredients to a bowl and mix well together.

Step 3

In a small bowl, beat an egg.

Step 4

Add 2 – 2.5 tablespoons of the stuffing to the edge/corner of an egg roll wrapper. Use your finger or a paintbrush to draw a line around the inside edges of the wrapper. Then roll it over to seal the side with the stuffing, then fold in the sides and continue rolling up like an egg roll. Place it in the air fryer basket or a baking sheet lined with parchment. Repeat 9 more times, or until all the stuffing is used up.

Step 5

Brush the outside of the egg rolls with the remaining egg mix, then gently spray the outside of them with avocado oil (or another high smoke point oil).

Step 6

Air fry for 10 – 12 minutes at 420F, flipping halfway through.

Step 7

Enjoy fresh out of the air-fryer or oven – these are DEF best served hot!

Quick Roasted Salsa

Ingredients for 4 servings

  • 4 vine tomatoes
  • 1 medium red onion, quartered (cut into 4 large pieces)
  • 1 serrano pepper (or more/less to taste)
  • pinch of sea salt & pepper
  • avocado oil spray
  • 3 garlic cloves
  • 1 1/2 cups chopped cilantro with stem (or more/less to taste)
  • juice from 2 limes
  • sae salt & pepper to taste

Steps

Step 1

Set oven to 420F.

Step 2

Place tomatoes, onion and serrano on a baking sheet lined with parchment and spray with avocado oil and sprinkle with sea salt & pepper.

Step 3

Roast in the oven for 15 – 20 minutes, or until the outside of the tomato and onion have blistered with slight char marks. Allow the items to gently cool, about 5 minutes.

Step 4

Add roasted ingredients and the remaining ingredients to a food processor. PULSE blend until you reach your desired consistency and season to taste with sea salt, pepper and lime.

Step 5

Enjoy with your favorite dipper, like these air-fried egg rolls!

    I have made these and the salsa multiple times and they are amazing!! I make them ahead, wrap individually (I learned the hard way) unfried in saran wrap and freeze, and air fry in the morning to bring to work for lunch. I found the recipe watching you on youtube–I also love your videos. I’ve never left a recipe review before, but I couldn’t believe this had no reviews yet and wanted to be the first.
