Air-Fried English Muffin Margherita Pizzas

Ingredients

English Muffin Pizza Bites
Ingredients for 1 serving

1 serving = 2 halves or 1 whole
  • 1 whole wheat English muffin
  • spray olive oil
  • 4 tablespoons pizza sauce
  • 1 tablespoon The Fit Cook Land seasoning (or Italian seasoning)
  • 2oz (two 1oz) slices reduced-fat mozzarella
  • 4 cherry tomatoes, quartered or halved
  • OPTIONAL: 1 slice cooked center-cut bacon OR 1/4 cup sautéed mushrooms**
  • garnish
    • fresh basil to taste
    • red pepper flakes

**Note: bacon IS included in the macronutrient count for this recipe.**

Steps
  1. Set air fryer (or oven) to 400F.  Slice open the muffin and spray each half with a little olive oil.  Place on the air-fryer tray or on a baking sheet and toast for 6 – 8 minutes until golden brown.
  2. After toasting, add two tablespoons of pizza sauce to each half.  Then sprinkle with seasoning before adding the cheese.  Add cherry tomatoes and if desired, bacon or mushrooms.
  3. Place back in the air-fryer or oven for 5 – 7 minutes, or until the tomatoes have blistered and the cheese has melted and slightly browned on top.
  4. Once finished cooking, top with freshly torn basil and red pepper flakes.
