This amazing corn fritters recipe is quick and easy, with just a few simple ingredients to make a delicious snack or meal that’s popping with energy for your workout. You can use corn kernels from fresh corn or frozen corn, and this is a great fritters recipe for leftover corn on the cob. I like to pan-fry the corn fritters on the stove until the outside is crispy. You can serve them with or without your favorite fritter sauce.
There is nothing better than sweet corn in the summer, and this amazing turkey and corn fritter is sure to please. Bring them to the next fourth of July or Labor Day potluck barbecue and watch them fly off the table. You can also freeze the patties to save for later since they freeze well. While I didn’t do a here, you can add a pinch of baking powder to this fritters recipe to make it extra fluffy. Pair it with some cilantro-lime or sour cream and you have a party going. A bit of jalapeno adds a kick of heat.
If you don’t have fresh summer corn, canned corn is fine to use too. The ground turkey adds some protein, and a tasteful seasoning mix of onion, cumin, garlic, and paprika really ties it all together. If you’re looking to elevate it to a whole new level, a dash of cinnamon will bring out the sweetness in the corn.

Spicy Turkey-Corn Fritters
Ingredients
Ingredients for up to 4 servings:
- 8oz extra lean ground turkey
- 2 cups steamed corn (drained)
- 1/3 cup corn flour (masa harina OR simply blend raw oatmeal into flour)
- 1 Egg
- 1 Egg white
- 1oz goat cheese
- 1 Jalapeno
- ¼ cup bell pepper pieces
- Seasonings:onions, garlic, cumin, sea salt, paprika and if you’re brave – a hint of cinnamon to bring out the sweetness in the corn
Steps
Step 1
Set a skillet on medium-high heat and lightly spray with coconut oil. Toss in onion and granulated or freshly minced garlic. Cook in the skillet until the onions are nearly translucent.
Step 2
Season turkey and cook in skillet.
Step 3
Once cooked add corn, corn flour, eggs, peppers, jalapeno and goat cheese. Mix well.
Step 4
Form small patties and cook in skillet.
Step 5
Enjoy!
