Air-Fried English Muffin Margherita Pizzas
Ingredients for 1 serving
1 serving = 2 halves or 1 whole
- 1 whole wheat English muffin
- spray olive oil
- 4 tablespoons pizza sauce
- 1 tablespoon The Fit Cook Land seasoning (or Italian seasoning)
- 2oz (two 1oz) slices reduced-fat mozzarella
- 4 cherry tomatoes, quartered or halved
- OPTIONAL: 1 slice cooked center-cut bacon OR 1/4 cup sautéed mushrooms**
- garnish
- fresh basil to taste
- red pepper flakes
**Note: bacon IS included in the macronutrient count for this recipe.**
Steps
Step 1
Set air fryer (or oven) to 400F. Slice open the muffin and spray each half with a little olive oil. Place on the air-fryer tray or on a baking sheet and toast for 6 – 8 minutes until golden brown.
Step 2
After toasting, add two tablespoons of pizza sauce to each half. Then sprinkle with seasoning before adding the cheese. Add cherry tomatoes and if desired, bacon or mushrooms.
Step 3
Place back in the air-fryer or oven for 5 – 7 minutes, or until the tomatoes have blistered and the cheese has melted and slightly browned on top.
Step 4
Once finished cooking, top with freshly torn basil and red pepper flakes.
