Bison Burger

Ingredients

  • 1.5 lb lean ground bison (or choice of meat)
Jerk Seasoning
  • 2 teaspoons dried thyme
  • 1 teaspoon nutmeg
  • 2 tablespoons coconut sugar
  • 1 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 2 stalks green onion, chopped
  • 1 habanero or scotch bonnet, chopped
    • If you do not want it too spicy, remove the seeds
  • 1.5 tablespoon fresh ginger
    • 2 teaspoons ginger powder
  • pinch of sea salt & pepper
  • 1 tablespoon low sodium soy sauce
  • 5 wheat hamburger buns (or choice of bread)
Garnish (optional)
  • tomato
  • onion
  • lettuce
  • olive oil mayonnaise

Steps

Step 1

In a large mixing bowl, combine all the ingredients for the meat. Mix thoroughly, ensuring the spices are evenly distributed throughout the meat mixture. If handling hot peppers, use gloves or be sure to wash your hands thoroughly afterwards.

Note: I highly suggest using gloves since you are handling very hot peppers.  If not, do not touch anything after mixing and immediately wash your hands with soap & water.

Step 2

Form the seasoned meat mixture into 5 uniform patties. For precise sizing, you can use a food scale to divide the mixture evenly.

Note: If you want to exact use a food scale simply place an empty bowl on a food scale and “zero it out” or press the Tare function.

Then add the seasoned raw meat.  Once you get the weight in grams or pounds, divide that by 5 (or number of servings you prefer) to get the weight for each patty.

Take a portion of the meat and place it on the food scale by itself and add/takeaway meat until you reach the calculated weight for each patty.

 

 

Step 3

Heat a nonstick or cast-iron pan over medium-high heat and spray with avocado or olive oil.

Note: if you are using cast-iron, place it on medium heat and monitor it for sticking.  If it is sticking either 2 things are happening:

1) the heat is too high and you need to take the pan off the heat to let it cool; or

2) you are not allowing the meat to cook through as it will easily lift off the cast iron once it is finished.

Step 4

Once the pan is hot, carefully place the patties onto the pan. Cook for approximately 3-4 minutes on each side, or until your desired level of doneness is achieved.

Assemble your burgers by placing each patty between a wheat hamburger bun. Top with your choice of garnish, such as tomato slices, onion rings, lettuce leaves, and a dollop of olive oil mayonnaise.

These are also GREAT for meal prep as the burgers will last for 4 – 6 days in the fridge in an airtight container.  Just keep everything separate until you would like to enjoy!
