Chili is a meat eater’s favorite dish, but this recipe is entirely plant-based. In this one, I use Beyond Meat veggie burger patties to cheat the texture a little bit, but all of the flavors come from this fusion recipe’s blend of chili spices and curry powder. If you want to make it even MORE filling, you can add potatoes or even slices of mango to the chili and serve it with flatbread on the side. This is an old fav of mine that I’ve returned to countless times, and I bet you will too!

2. Mediterranean Diet Tuscan Soup
The Mediterranean Diet is my favorite to stick to and has officially been the best diet for two years in a row. How can you make it even better? By making it plant-based! This is a warming, hearty soup that’s full of flavor and packed with nutrients to fuel your day, making it a perfect vegan soup to enjoy on your own or dazzle dinner guests. Two tablespoons of The Fit Cook Land seasoning pull all of the flavors together, but the fresh-chopped basil makes this an excellent option in the summer.

3. Best Low Carb Vegan Street Tacos
Vegan street tacos? You know it! In this recipe, I use cauliflower and walnuts (trust me) to fake the meat. These tacos are PACKED with heat and nutrients that will keep you feeling full long after you’re done with the meal. You might need to stop and start your food processor and mash things up a bit as you go along to get the texture right. But the real bonus? You can taste the “meat” as you mix it and adjust your spices to get it just right.

Who said that tacos were only for Tuesdays?? Let’s keep the taco train going! I LOVE cheap crockpot recipes – you can put the ingredients together and walk away for a few hours, so you save time AND money. One of my favorite things about this recipe, though, is the saltiness of the bulgogi mingling with the spiciness of the tacos; it’s guaranteed to trick anyone’s tastebuds!
5. Dairy-Free Brown Rice Risotto Meal Prep
I often hear people who are considering plant-based diets say that they’re afraid they’ll miss some of their favorite comfort foods. But I think by now, we’ve proven that there’s a solution to just about any recipe, including risotto. This works great as a side dish or as a meal of its own and is one of my favorite vegan meal preps from fitmencook.com. The trick? Using nutritional yeast to give the risotto its signature creamy, cheesy consistency.

Once again, we’re going to use jackfruit as our hearty meat supplement and fire up the slow cooker to get the consistency that we’re after.
