Vegan Tacos Recipe

Ingredients

vegan taco walnut cauliflower meat

Ingredients for 5 servings

  • 3 cups cauliflower florets (1 medium head cauliflower)
  • 2 cups (250g) raw walnuts
  • Seasoning
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 tablespoon chili powder
    • 2 teaspoons cumin
    • 1 1/2 teaspoons dried oregano
    • 1 tablespoon hot sauce (Tapatio hot sauce)
    • pinch of sea salt & pepper
  • Garnish
    • fresh lime juice
    • cilantro
Steps
  1. Set oven to  375F.
  2. Place all ingredients – except the garnish – into a food processor.   Pulse blend until well-mixed, like a  paste.  Add the “meat” mixture to a baking tray lined with parchment and be sure that it is spread  out.  Bake for about 35 minutes, until the edges are toasted and brown, flipping and chopping up the mixture halfway through the cooking cycle.
  3. Once finished, let the meat slightly cool, then serve!

Delicious Avocado Mash with Bell Pepper Scoops

Ingredients

vegan taco walnut cauliflower meat

Ingredients for 4 servings

  • 3 large ripe avocados
  • 1/2 cup diced onion
  • 1 teaspoon cumin (optional)
  • juice from 1 lime
  • pinch of sea salt & pepper
  • Garnish
    • pico de gallo
Steps

Add ripe avocado flesh to a bowl and mash it up with a  fork.  Add the rest of the ingredients and mix together.  If desired, top it off with vegan taco meat and pico de gallo and enjoy with halved mini sweet bell peppers.
