Everyone loves crispy fried chicken, but there aren’t many healthy versions of this meal like this. Besides being delicious, it is easy to make at home. Avoid unhealthy and heavy fast food, set aside half an hour, and enjoy fried chicken without remorse.

If you’re a fan of frying chicken like me, you’ve probably tried several healthier (guilt-free) alternatives to create that crispy, golden crust – coconut flour, flax seeds & wheat germ, oatmeal, and even wheat cornflakes, BUT…what about baked potato chips?! Beat one egg in a bowl. In a separate bowl smash baked protein chips. Slice chicken breast into pieces. Dip chicken breasts in the egg and then in potato chips. Sprinkle with coconut oil and bake in the oven for 20 minutes at 405F.

Boom! Serve crispy fried chicken tenders with your favorite dipping sauce and enjoy. You can also serve with oven potato fries, roasted or steamed veggies, or anything you like.
