Sesame Ginger Mango Dressing & Noodle Salad

Sesame Ginger Mango Dressing (UPDATED Feb 2023)

Ingredients for about 20oz (10 servings)
1 serving = 4 tablespoons
- 1 1/2 cups frozen mango, thawed
- 3 tablespoons rice vinegar
- 2 tablespoons mirin (optional)
- 2-inch piece of ginger, peeled
- 4 tablespoons low sodium soy sauce
- juice from 1 lime
- juice from 2 small oranges (or more/less to taste – I used tangerines)
- 1 tablespoon red pepper (or chili) flakes
- 2 garlic cloves
- 1/4 cup olive oil (or avocado oil)
- 2 tablespoons sesame oil
All of the ingredients – EXCEPT for the oils – to a high powered blender. Blend until smooth. Season to taste with what’s missing. Once well mixed and seasoned to your liking, place the blender on a low speed and slowly pour in the oils.
Store in an airtight container in the fridge. Should last up to 2 weeks in the fridge.

Watercress Noodle Salad with Shrimp

Ingredients for 2 servings
- 1 bundle of fresh watercress, rinsed
- 3oz cooked ramen rice noodles (or spaghetti), chilled
- 2 cups shaved (red) cabbage
- 1 red bell pepper, thinly sliced
- 1 radish, sliced
- 1/2 cup shredded carrots
- 1/2lb cooked jumbo shrimp (OPTIONAL)
- Garnish
- sesame seeds
Mix together all of the ingredients in a large mixing bowl. Then toss in mango dressing!
