One of my all-time favorite snacks and side items – prosciutto wrapped asparagus. If you’re not a fan of ham, then use turkey or even beef bacon. This version has a faint sage and maple flavor just in time for the holidays. Remember, treat this as a side dish or a snack, not a full meal.

For this dish, you’ll need 30 spears. Find thick ones, because thin asparagus will dry very easily in the oven. It is also much harder to roll the prosciutto around thin ones. Also, you’ll need 30 thin slices of prosciutto, dried sage, apple cider vinegar and maple syrup.

To prepare the asparagus perfectly, cook them in boiling water for a few minutes, then immediately put them in cold water to stop cooking and keep a nice green color.

Use prosciutto slices that are half as long as the asparagus spears and wrap them tightly. Cook the wrapped asparagus in a nonstick skillet sprayed with olive oil for about 5 to 7 minutes. Sprinkle in dried sage and add the apple cider vinegar. Shake the pan to coat each spear evenly.

Before the asparagus is completely done, reduce the heat and add the maple syrup. Repeat shaking the pan to cover each asparagus evenly with syrup and remove from the heat.

Garnish with balsamic glaze and fresh chopped sage. Viola! Perfectly salty and fresh!

It would be best to serve them while they are still hot. If you are expecting guests for dinner, you can wrap the asparagus ahead of time, store them in the refrigerator and cook them before they arrive. Serve hot as an appetizer with a drink.

Maple Prosciutto Wrapped Asparagus Recipe

Ingredients

* Optional Substitution Note

Ingredients for 6 servings

  • 30 thick asparagus spears
  • 1lb prosciutto (about 30 thin slices)
  • 2 teaspoons dried sage
  • 1 teaspoon apple cider vinegar or balsamic glaze
  • 2 teaspoons maple syrup (OR raw honey or agave) – I used Simple Truth brand
  • cracked pepper to taste
  • Optional garnish
    • balsamic glaze
    • fresh chopped sage

Steps

Step 1

Bring a pot of water to a boil. Add raw asparagus spears. Boil for 3 to 5 minutes, then immediately remove the asparagus and place them in a bowl of cold water so they stop cooking. This also helps preserve their vibrant green color.

Step 2

Wrap 1 thin slice of prosciutto around 1 asparagus spear. Repeat.

Step 3

Set a nonstick skillet on medium heat and spray with olive oil or avocado oil. Once the skillet is hot, add the wrapped spears with the flap side down.

Step 4

Note: You may need to cook the spears in batches depending on how large your skillet is.

Step 5

While the spears are cooking in the skillet, sprinkle in some sage and gently shake the pan to coat. Then add the apple cider vinegar. Shake the pan so the spears turn and get covered in the vinegar as well. It will create steam – no worries! This helps to soften and wilt the spears.

Step 6

If needed, manually flip the spears using a tongs.

Step 7

When the top and bottom are seared, about 5 to 7 minutes, reduce the heat on the skillet, then add the maple syrup. Immediately shake the pan to coat the spears and remove from the heat so the maple caramelizes and “candies” the spears.

Step 8

Garnish and serve while hot.
