Maple Prosciutto Wrapped Asparagus Recipe

Ingredients

Ingredients for 6 servings

  • 30 thick asparagus spears
  • 1lb prosciutto (about 30 thin slices)
  • 2 teaspoons dried sage
  • 1 teaspoon apple cider vinegar or balsamic glaze
  • 2 teaspoons maple syrup (OR raw honey or agave) – I used Simple Truth brand
  • cracked pepper to taste
  • Optional garnish
    • balsamic glaze
    • fresh chopped sage

Steps

Step 1

Bring a pot of water to a boil. Add raw asparagus spears. Boil for 3 to 5 minutes, then immediately remove the asparagus and place them in a bowl of cold water so they stop cooking. This also helps preserve their vibrant green color.

Step 2

Wrap 1 thin slice of prosciutto around 1 asparagus spear. Repeat.

Step 3

Set a nonstick skillet on medium heat and spray with olive oil or avocado oil. Once the skillet is hot, add the wrapped spears with the flap side down.

Step 4

Note: You may need to cook the spears in batches depending on how large your skillet is.

Step 5

While the spears are cooking in the skillet, sprinkle in some sage and gently shake the pan to coat. Then add the apple cider vinegar. Shake the pan so the spears turn and get covered in the vinegar as well. It will create steam – no worries! This helps to soften and wilt the spears.

Step 6

If needed, manually flip the spears using a tongs.

Step 7

When the top and bottom are seared, about 5 to 7 minutes, reduce the heat on the skillet, then add the maple syrup. Immediately shake the pan to coat the spears and remove from the heat so the maple caramelizes and “candies” the spears.

Step 8

Garnish and serve while hot.
