Prepare the steaks: Remove the steaks from the fridge about 30 minutes before cooking. Pat them dry with a paper towel to remove excess moisture.

Season generously: Rub the steaks with olive oil, then sprinkle with salt, black pepper, garlic powder, and smoked paprika.
Step 3
Preheat the grill: Set your steak grill to high heat (450-500°F). For charcoal grills, light the coals and let them become white-hot.
Step 4
Grill the steaks: Place the steaks on the grill and cook for 3-4 minutes per side for medium-rare. For medium, grill for 4-5 minutes per side.

Use the touch test or a thermometer: Medium-rare is 130-135°F, medium is 135-145°F, and medium-well is 145-155°F.
Step 6
Add butter and herbs (optional): Place a small pat of butter on each steak during the last minute of grilling. Fresh herbs can also be added for extra aroma.

Let the steak rest: Remove the steaks and let them rest for 5-10 minutes before slicing to retain their juices..
