Are you looking for a chocolate recipe that is not only tasty but also vegan-friendly? Well, we have the perfect chocolate recipe just for you! Put on your apron, roll up your sleeves because it’s time to make some dark chocolate almond butter clusters!

Dark chocolate is an ingredient that is used a lot in baking. What people don’t know is that there are varieties of vegan chocolate. Vegan chocolate is made from plants, like Erythritol, which gives the chocolates a natural sweetness. But for this recipe, we’ll be using Stevia, which is also used as a plant-based sweetener.
For the ingredients, we’ll be using Stevia sweetened dark chocolate, almond butter, and roasted almonds. You can also use different kinds of vegan chocolate, you can use whatever is available to you. You can also use your preferred nuts for this recipe. As for the almond butter, you can use any kind of nut butter for this recipe but for we’ll stick with almond butter for this recipe.

For the preparation, melt your sweetened chocolate baking chips in a glass or a ceramic bowl. Once it is melted, mix it up to make sure that it is smooth. Then, add in your roasted almonds, and almond butter. You can also add in dried berries to your recipe to add a bit of fruity goodness to your chocolatey treat. Mix your ingredients until fully folded.

Next, line up a baking tray with wax paper or parchment paper. Use a large tablespoon to scoop out a heaping tablespoon of chocolate unto the tray. Make sure to divide and separate them. This keeps your treats from sticking with each other. You can also sprinkle flake salt on top of your treats for garnish. Place in the freezer for at least 45 minutes, and enjoy your delicious and succulent dark chocolate almond butter clusters!

Dark Chocolate Almond Butter Clusters (with Berries)

Ingredients for 20 small clusters

  • 255g (9oz) Stevia sweetened dark chocolate (I used Lily’s brand)
  • 2/3 cup smooth almond butter
  • 1 cup (140g) roasted almonds
  • 34g freeze dried berries (raspberries, blueberries, strawberries), OPTIONAL
  • Garnish
    • flake salt, OPTIONAL
    • Goji berries, OPTIONAL

Steps

Step 1

Melt the chocolate baking chips in the microwave in a glass or ceramic bowl. Once melted, mix it up to make sure it’s smooth.

Step 2

Add the remaining ingredients to the bowl and mix together.

Step 3

Line a baking tray with parchment or wax paper. Use a large tablespoon and scoop out a heaping tablespoon and place the spoon full on the tray. Repeat until all the chocolate has been used, and make sure there is enough space between the treats so they are not touching.

Step 4

If desired, add the garnish on each treat, then place in the treats in the freezer for at LEAST 45 minutes.

Step 5

Store these in the fridge or freezer in an airtight container.
