2-Ingredient Avocado Fudge Truffles

Ingredients for 15 fudge bites

* Optional Substitution Note

  • 1 1/2 large ripe avocado (about 1.5 cups)
  • 9oz (sweetened) dark chocolate (I used Libby’s brand that is sweetened with Stevia)
  • OPTIONAL – 2 tablespoons agave or maple syrup if you’d like it a bit sweeter
  • 1 tablespoon cacao powder or chocolate powder for dusting

Steps

Step 1

Melt the dark chocolate in the microwave or on a stovetop, your preference.

Step 2

Add the avocado and melted chocolate to a food processor or a high powered blender and process until smooth.  Note: add agave if you would like a sweeter flavor and/or consider using a chocolate with a lower cacao percentage.

Step 3

Depending on the size you would like should determine the container you use to help shape them. I used a standard 24oz meal prep container – 8″ x 5 1/4″ x 2″ that I lined with parchment paper. Add the processed fudge to it and make sure you pack it in tightly.

Step 4

Cover and store in the fridge or freezer for 20 – 30 minutes to harden and take shape.

Step 5

Remove from the fridge, then slice into uniform pieces.

Step 6

Add the bites to a bowl and sprinkle in cacao to dust them to prevent them from sticking to each other. Note: if you do NOT like bittersweet flavor, then I suggest dusting with chocolate powder, not dark chocolate powder, or skipping this step altogether.

Step 7

Store in an airtight container in the fridge. Should last for 7 – 10 days in the fridge and for several weeks when stored in the freezer. While these can sit out the refrigerator, they will spoil much faster because of the avocado.

    These were super easy to make once I realized you need to blend in a food processor not a blender. Took all but 5 mins. They’re absolutely delicious. I topped mine with sea salt instead of coating in coco powder. Definitely making these again
