QUINOA GRANOLA

Ingredients for 20 servings

* Optional Substitution Note

Approx serving size ~3 tablespoons (24g)

  • 1 cup raw almonds, chopped
  • 1 cup rolled oats
  • 1/2 cup uncooked quinoa
  • 4 tablespoons avocado oil or olive oil
  • 4 tablespoons maple syrup
  • Pinch of salt
  • 2 teaspoons nutmeg
  • 2 teaspoons cinnamon
  • 2 tablespoons coconut sugar (optional but included in the macronutrient breakdown)

Steps

Step 1

Set oven to 350F.

Step 2

In a bowl mix together all of the ingredients (except the coconut sugar), ensuring every piece is covered in oil and maple.  Spread out the mixture on a nonstick baking tray.  Sprinkle the coconut sugar on top.

Step 3

Bake for 20 – 25 minutes until golden brown, mixing the granola halfway thru to ensure even baking.

Step 4

Once the cooking cycle has ended, allow the granola to cool on the baking tray until room temperature.  Then break it up with your hands.  Store it in an airtight container in a dry place for up to 1 month.
