Easy Moroccan Salad

Ingredients

Moroccan Salad and Chicken Pita
Ingredients for 4 servings

  • 1 cucumber, peeled and diced (seeds removed)
  • 3 Roma tomatoes, diced (seeds removed)
  • 1/3 cup Kalamata olives
  • 1/2 red onion, diced
  • 2 tablespoons fresh parsley, finely diced
  • 3 tablespoons olive oil
  • juice from 1 lemon
  • sea salt & pepper to taste
Steps

In a bowl, mix together all the ingredients and season to taste with sea salt, pepper and lemon.  Allow to rest in the fridge for about 20 minutes before serving.

Moroccan Chicken with Pita

Ingredients

Moroccan Salad and Chicken Pita
Ingredients for 4 servings

  • 1 lb chicken breast, raw
  • 2 tablespoons olive oil
  • Spice rub
    • 1 1/2 teaspoons cinnamon
    • 2 teaspoons paprika
    • 1 teaspoon ginger
    • 1 teaspoon turmeric
    • 1/2 teaspoon nutmeg
    • 1 teaspoon cumin
    • pepper to taste
    • pinch of sea salt
  • 4 whole wheat pitas
  • 4 servings Moroccan salad
  • 4 tablespoons tahini
  • Garnish
    • chopped parsley
    • chopped cilantro
Steps
  1. Set oven to 420F.
  2. Season chicken breasts with ONE (1) tablespoon olive oil and the spice rub.  Let the chicken marinate for at least 20 minutes or overnight.
  3. Set a skillet on medium high heat and once hot add olive oil.  Add the chicken breast and sear on each side for 3 minutes, then place the entire skillet in the oven and bake for 6 to 8 minutes, or until the chicken is cooked through.
  4. Garnish and enjoy with a whole wheat pita, a serving of Moroccan salad and a tablespoon of tahini.
