Low Carb Turkey Meatball Meal Prep With Flatbread & Salad

Make sure your oven is preheated to 400 degrees Fahrenheit so that the meatballs can bake to perfection.

Mix 1 1/2 pounds of 93% lean ground turkey (or a leaner choice if you like) with 1 teaspoon garlic powder, 2 teaspoons onion powder, 1/3 cup of coarsely chopped cilantro, 1/4 cup of pine nuts, and a dash of sea salt and pepper in a big dish. You can remove the pine nuts entirely or swap them out for walnuts if preferred. Combine each component thoroughly in the mixture.

Apply a little layer of olive oil to your hands to avoid the meat mixture from sticking to them. Roll a portion of the meat mixture approximately the size of a ping pong ball, or about 1 ounce, into meatballs. Put each meatball on a baking sheet or mini-muffin pan. Continue doing this until the entire meat mixture has been used, resulting in around 20 meatballs.

To help the meatballs brown and produce a crispy skin, lightly mist them with olive oil. They should be baked for 10 to 12 minutes in a preheated oven. To get a wonderful golden brown color on the top when they are thoroughly cooked, turn the oven to broil and let them cook there for 1 to 2 minutes.

The meatballs should cool somewhat after baking before being removed from the mini-muffin pan. By doing this, meatballs are kept from overcooking and becoming dry.

Ingredients for 5 servings

  • Meatballs
    • 1 1/2 lb 93% ground turkey (or leaner option to reduce the amount of fat)
    • 1 teaspoon garlic powder
    • 2 teaspoons onion powder
    • 1/3 cup roughly chopped cilantro
    • 1/4 cup pine nuts
      • SUBSTITUTE: walnuts (or just omit)
    • 4oz feta crumble
    • pinch of sea salt & pepper

Set oven to 400F.

Mix together the ingredients for the meatballs in a large bowl. Spray your hands with a little olive oil then scoop out about 1oz of meat, about the size of a ping pong ball and form a meatball. Add the meatball to a mini-muffin tray or a baking sheet. Repeat until all the meat is used, roughly 20 meatballs.

Step 3

Lightly spray the meatballs with a little olive oil, then bake for 10 – 12 minutes at 400F, then broil for 1 to 2 minutes to brown the top. After baking, allow them to slightly cool then remove them from the mini-muffin tray to prevent them from further/over-cooking.

    • 5 cups mixed greens
    • 25 cherry tomatoes, halved
    • 1/4 red onion slices
    • juice from 1 lemon
    • pinch of sea salt & pepper
