Low Carb Turkey Meatball Meal Prep With Flatbread & Salad

Ingredients

Ingredients for 5 servings

  • Meatballs
    • 1 1/2 lb 93% ground turkey (or leaner option to reduce the amount of fat)
    • 1 teaspoon garlic powder
    • 2 teaspoons onion powder
    • 1/3 cup roughly chopped cilantro
    • 1/4 cup pine nuts
      • SUBSTITUTE: walnuts (or just omit)
    • 4oz feta crumble
    • pinch of sea salt & pepper
Steps
  1. Set oven to 400F.
  2. Mix together the ingredients for the meatballs in a large bowl.  Spray your hands with a little olive oil then scoop out about 1oz of meat, about the size of a ping pong ball and form a meatball. Add the meatball to a mini-muffin tray or a baking sheet.  Repeat until all the meat is used, roughly 20 meatballs.
  3. Lightly spray the meatballs with a little olive oil, then bake for 10 – 12 minutes at 400F, then broil for 1 to 2 minutes to brown the top.  After baking, allow them to slightly cool then remove them from the mini-muffin tray to prevent them from further/over-cooking.
  4. Enjoy with a salad or low-carb flatbread.

  • 5 pieces of low-carb flatbread
  •  Salad
    • 5 cups mixed greens
    • 25 cherry tomatoes, halved
    • 1/4 red onion slices
    • juice from 1 lemon
    • pinch of sea salt & pepper
    • 10 tablespoons low-calorie tzatziki yogurt dressing
Steps

Make the flatbread and assemble the salad.
